The Wonders of Coconut Milk

Coconut milk is a great addition to any pantry. It is high in protein and fat (the good kind of fat, like the kind in avocados). It is great for people who are allergic to dairy, and it stores well, so it is perfect for food storage. I keep about a case of coconut milk on hand. Here are some tasty ideas:

  • Put a bunch of fruit in your blender (pineapples, peaches, bananas, whatever), add some ice, a little honey, and about a half a can of coconut milk, This little shake should fill you up for the rest of the morning!
  • Mix one can of coconut milk with one package of jell-O pudding (3 oz. size). It tastes like Boston Creme!
  • Make coconut ice cream (it's dairy free!). This recipe only calls for coconut milk, coconut, and sugar! This recipe is for chocolate coconut ice cream.

Note: when buying coconut milk, you want a good quality product. Quality coconut milk will have around 12 grams of fat MINIMUM!! Anything less than that is more water than anything else. Coconut cream is just a heavier version of coconut milk. If you are using this in your food storage, you will want a higher fat/protein content.
